Witching hour. 

It's a b%$#&, isn't it?

Noah has grown out of it now, but my goodness, those first couple of months were tough! 

With a toddler and a newborn to bath, dress, read to and get ready for bed, I can't imagine what I would have done if I'd needed to cook dinner, too. 

Before Noah was born, I spent some time preparing meals so when he arrived, I didn't have to think about cooking for a little while. 

We had 6 weeks worth of main meals frozen, so all I had to do was prepare fresh salads/veggies. 

It was a lifesaver, at a time when all I wanted to do was focus on getting us all used to being a family of four. 

I've been prepping food like this for years (although not on this grand scale)! 

Each week, I'll do 2 cook ups, and the food lasts 3-4 days. 

The cooking takes about 1.5-2 hours on average, but it's so worth the time, as each day I can just reach into the fridge and reheat meals, and focus on doing other things that are important to me.

Plus, a very animated 3 year old, who proves to be very chatty!
